Apple Fritters With Applejack Custard Sauce


1 egg
2 teaspoons granulated sugar
1/2 cup half and half
1/2 cup flour
1/2 teaspoon baking powder
1 dash salt
2 apples, peeled and cut into 8 wedges each
Powdered sugar

Applejack Custard Sauce:

1 egg
1 1/2 tablespoon granulated sugar
1/2 cup half and half
1 tablespoon applejack


  1. In bowl, beat together egg, granulated sugar and half and half.
  2. In second bowl, stir together flour, baking powder and salt. Stir into egg batter. Dip apple wedges into batter to coat.
  3. In deep-sided pan, heat 2 inches of oil to 370 degrees. Add half the apple wedges at a time, being careful to not crowd them. Fry on first side 2 to 3 minutes. Turn over and fry second side 1 to 2 minutes. Remove with slotted spoon. Place on platter lined with paper towels to drain. Place 2 to 3 tablespoons powdered sugar in sieve and dust fritters.
  4. Meanwhile, prepare custard sauce. Arrange fritters on 2 dessert plates and drizzle with sauce. Serve warm.
  5. Applejack Custard Sauce: In bowl, beat together egg and granulated sugar. Heat half and half to a simmer in small pan. Pour 1/4 cup of the half and half over egg mixture; beat well. Pour egg mixture back into pan. Cook over very low heat, stirring constantly, until mixture thickens to consistency of pancake batter, 3 to 4 minutes. Remove from heat. Stir in applejack.
