Apple Walnut Cake
Ingredients:
1 cup butter, room temperature
2 cups granulted sugar
3 eggs
1 1/2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups peeled chopped fresh apples
1 cup coarsely chopped walnuts
Directions:
- In a mixing bowl, cream together the butter and sugar until light. Add the eggs, one at a time, beating after each addition. Stir in the vanilla. Sift together the flour, baking powder, baking soda, and salt, and stir in the creamed butter mixture.
- Stir in the chopped apples and walnuts. Spread the cake batter into a greased and floured 13x9-inch baking pan, and bake in a 350° oven for 45 minutes, or until a wooden pick or cake tester inserted in centre comes out clean. Cool for at least 30 minutes before serving. Serve with whipped cream or a caramel sauce.
