Apple Walnut Cake


1 cup butter, room temperature
2 cups granulted sugar
3 eggs
1 1/2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups peeled chopped fresh apples
1 cup coarsely chopped walnuts


  1. In a mixing bowl, cream together the butter and sugar until light. Add the eggs, one at a time, beating after each addition. Stir in the vanilla. Sift together the flour, baking powder, baking soda, and salt, and stir in the creamed butter mixture.
  2. Stir in the chopped apples and walnuts. Spread the cake batter into a greased and floured 13x9-inch baking pan, and bake in a 350° oven for 45 minutes, or until a wooden pick or cake tester inserted in centre comes out clean. Cool for at least 30 minutes before serving. Serve with whipped cream or a caramel sauce.
